This is a wonderful, easy, delicious and refreshing key lime cheesecake recipe.

You can make this key lime cheesecake with key limes or regular limes. I make mine with regular limes since this is what I had. It turned out beautifully.

I did have some complaints since some members of my family prefer the "raspberry chocolate cheesecake." Great! More for me!

This key lime cheesecake recipe is composed of 4 layers but do not let than deter you. It is very easy to make. This cheesecake can be assembled in about one half hour and baked for 45 minutes. Key Lime Recipe: Ingredients

Ingredients for the Crust

  • 12 whole graham crackers - about 1 3/4 cups
  • 1/2 cup ground nuts - I used almonds
  • 1/2 cup - 1 stick - of unsalted butter

Ingredients for the Custard

  • 6 large egg yolks
  • 3/4 cup sugar
  • 6 tablespoons fresh lime juice - either key lime or regular
  • 1 teaspoon grated lime peel

Ingredients for the Filling

  • 2 large eggs
  • 2 - 8 oz - cream cheese packages at room temperature
  • 2/3 cup sugar
  • 1 tablespoon grated lime peel
  • 3 tablespoonslime juice

Ingredients for the Topping

  • 16 oz container of sour cream
  • 3 tablespoons sugar

Method to make the crust:

  1. Crush the graham crackers into crumbs.
  2. In a greased spring form, place the graham cracker crumbs, the nuts and the melted butter. Press down in the bottom of the pan. For this step, I use a mash potato masher. It works beautifully.

Method to make the custard:

Note: to obtain the zest I use a "zester" I love that thing!

  1. In a saucepan, whisk the sugar and egg yolks together. Add the juice and zest and mix again until well blended.
  2. Place the saucepan on the stove on medium heat. Stir constantly of the bottom of your custard will stick!
  3. When the custard boils and thickens up remove from the heat. Let cool at room temperature, stirring occasionally.
  4. Place this layer on top of the crust.


Method to make the filling:

  1. Blend together the cream cheese, sugar, eggs lime juice and zest. I use a stand mixer for this process.
  2. Once this mixture is well blended, pour over the top of the custard.
  3. Place in an oven heating at 350 degrees and bake for 35 to 45 minutes.
  4. The sides of the top should look lightly golden and the center should still be a tad giggly when you gently touch the pan.


Method to make the topping:

  1. Mix the sour cream and the sugar.
  2. Place on top of the warm cheesecake and put back in the oven for an additional 10 minutes.
  3. Cool the key lime cheesecake completely before placing in the oven until set. Usually over night but as little as 4 hours will do. Also keep in mind that this key lime cheesecake recipe can be made up to 2 days in advance.
  4. To garnish use some lime slices.
