This is a recipe for chocolate peanut butter oatmeal cookies. This means that in these delicious cookies you have the perfect marriage of chocolate and peanut butter and the goodness of oats. In short...a perfect cookie!

At my house, it seems that peanut butter can never be eaten without some form of chocolate. These two substances seem to be like perfect magnets. Also, some of my family members, seem to do best when they do not have wheat products and these cookies do not have any flour...that's right ...none. So with one cookie, I can make everyone happy.

However, these chocolate oatmeal peanut cookies cannot be called true gluten free cookies because they do contain oats and oats are not considered a gluten free food.

Chocolate Peanut Butter Oatmeal Cookies


Oatmeal Chocolate Peanut Butter Cookies: Ingredients

2 sticks of butter - softened - 1 cup

1 cup of creamy natural peanut butter - crunchy is okay

1 1/2 cups of brown sugar - not packed

1 cup of white sugar

3 large eggs

4 1/2 cups of old-fashioned - regular - oats

2 teaspoons of baking soda

1 teaspoon of vanilla extract

1 package of semi-sweet chocolate chips - 12 oz

1 cup of peanuts - chopped

Chocolate Oatmeal Peanut Butter Cookies: Method

  • In a large mixing bowl and with a hand mixer - or a stand mixer - cream the butter, the white sugar, the brown sugar, the peanut butter and the eggs until they are well combined.
  • Add the oats, the vanilla, extract, and the baking soda, then combine well. Add the chocolate pieces and the peanut pieces, and again, mix well.
  • Drop by spoonful onto a greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes or until your cookies are golden brown.
  • Wait a few minutes before transferring to a serving platter.
  • Makes 5 to 6 dozen.
