For this easy tortellini soup you can use either. Just remember that the cooking time for fresh - or frozen - pasta is less than for dry pasta. The directions on the package should tell you how long your pasta should cook.

The fillings for tortellini can be quite varied. Mushrooms and cheese are quite popular. However tortellini fillings can also include meats and vegetables.

Chicken Tortellini Soup Recipe: Ingredients

  • 1 package of cheese tortellini - about 9 oz
  • 2 cups of chicken broth
  • 1 jar of Alfredo sauce or 1 1/2 cups of homemade Alfredo sauce
  • 2 cups of cooked chicken - or turkey
  • 1/2 cup of sundried tomatoes packed in oil - cut into little pieces
  • 3 cups of fresh spinach leaves
  • Some grated parmesan cheese - optional
  • 1/2 teaspoon of dried basil
  • 1/2 teaspoon of dried tarragon



Easy Chicken Tortellini Soup: Method

In a Dutch oven - or a large pot - cook the pasta and set aside.

In the same pot, combine the Alfredo sauce, the broth, the basil and the tarragon. Add the chicken and the sundried tomatoes. Bring to a boil and reduce heat immediately. Simmer uncovered for 5 minutes or until heated through.

Add the tortellini and the spinach. Cook 2 minutes or until the spinach leaves have wilted. Serve with grated parmesan cheese.
