This is an easy and delicious green chicken enchiladas recipe. I must admit however that I doubt that this is an original traditional Mexican recipe. These green chili enchiladas have a twist...they are much easier to make than the original way of making enchiladas. However, rest reassured that the flavor is not affected one bit. So they are simpler but just as delicious.

So what are enchiladas exactly?

Enchiladas are a popular Mexican entree. They consist of a tortilla - corn or flour - stuffed with meat, beans, cheese or a mixture of these items. The tortilla is then rolled up and covered with either red or green enchilada sauce and then baked.

Green Chicken Enchiladas Recipes

Chicken Enchiladas with Green Chili Sauce: Ingredients

  • 4 cups of shredded cooked chicken - or turkey
  • 1 packet of taco seasoning or this homemade recipe - I use the latter.
  • 1 can of green enchilada sauce - 28 oz
  • 10 to 12 flour tortillas - shredded
  • 1 large can of refried beans - 28 oz - or homemade refried beans
  • 8 ounces of sour cream
  • 3 cups of shredded cheddar cheese


Optional toppings:

  • Green onions - chopped
  • Red onions - chopped
  • Sour cream
  • Guacamole
  • Cilantro - chopped


Green Chili Chicken Enchiladas: Method

In a large dish, mix the shredded chicken, the green chili sauce and the taco seasonings.

In a greased 9x13 dish, spread a layer of shredded tortillas. Pour half of the shredded chicken mixture on top. Cover with another layer of shredded tortillas and the rest of the chicken mixture.

In a small bowl, mix the refried beans and the sour cream. Spread over the last layer of shredded tortillas.

Sprinkle the cheddar cheese on top of the beans. Bake this dish at 350 degrees for 25 to 30 minutes or until heated through and the cheese is melted and bubbly.
