Italian Ricotta Cheesecake: Ingredients

This ricotta cheese pie recipe is not only delicious and very easy to make, it is also gluten free. However, if you have no interest in eating gluten free, with only one minor adjustment, you still can make this Italian cheesecake recipe with regular wheat flour.

  • 3 cups oricotta cheese
  • 1 orange zest
  • 1 lemon zest - or if you want to omit the orange, 3 lemon zests
  • 1 tablespoon vanilla extract
  • 4 eggs - lightly beaten
  • 1 cup sugar
  • 6 tablespoons gluten free mix #3 - or regular flour
  • 1/4 teaspoon xanthan gum - omit with wheat flour
  • Powdered sugar


Italian Ricotta Pie: Method

  1. Preheat oven at 350 degrees F.
  2. In a large bowl, mix the dry ingredients.
  3. In another bowl, mix the ricotta cheese, the eggs and the vanilla extract. Pour into the dry ingredients and mix until well combined. Add the orange and lemon zests.
  4. Pour into a greased springform and bake for 1 hour.
  5. Let cool completely before eating. It will set further as it cools.
  6. Dust with powdered sugar before serving.
