Mexican Black Bean Soup Recipe


Crock-Pot Black Bean Soup: Ingredients

  • 2 pounds of dried black beans
  • 1 bunch of cilantro - chopped
  • About 6 green onions - cut
  • 1 large onion - chopped and sauteed in some olive oil
  • 1 can - 28 oz - of diced tomatoes
  • 1 teaspoon of dried oregano
  • 1 teaspoon of ground cumin
  • 3 tablespoons of chicken-less broth powder - optional
  • 1/2 teaspoon of garlic powder
  • Salt to taste
  • 1/4 to 1/2 teaspoon chipotle chili powder

Optional toppings:

  • Sour cream
  • Grated cheddar cheese
  • Guacamole
  • Salsa



Mexican Black Bean Soup Recipe: Method

  1. The night before you plan to make you black bean soup, place your black beans in a colander and rinse them under cold water. Then place them in a large bowl and cover them with cold water. There should be at least one extra inch of water above the beans. Let them soak all night. They should double in size.
  2. The next day, strain your beans and rinse them. Place them in a crock-pot and add enough water to cover them plus 1 inch. Turn on high for 6 hours or on low for 10.
  3. When the beans are cooked, add the remaining ingredients and spices. Heat through - about 15 minutes.
  4. Serve with tortillas or tortilla chips and any topping you want.
  5. Makes about 8 servings
