Recipe For Rice Pudding

Recipe for Rice Pudding; Ingredients

  • 3 cups of water
  • 1 1/2 cups of medium or short grain rice
  • 4 cups of milk - divided
  • 2/3 cup of sugar
  • 2 large eggs
  • 2 tablespoons of butter
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of cinnamon powder - optional
  • 1 1/3 cups of raisins - optional

Note: If you choose to use raisins, soak them overnight for an even better flavor and plumper raisins


Instructions Recipe for Rice Pudding; Ingredients

  1. Place the rice and the water in a pot. Place a lid on top and put the pot on the stove on medium heat.
  2. Minute rice pudding recipe, Set your timer for 20 minutes.
  3. When the rice is cooked and the water is absorbed add 3 cups of milk to the pot. Once again cover and set your timer for 20 minutes.
  4. In a large bowl, beat the two eggs with the remaining cup of milk. Set aside.
  5. When the milk is absorbed, add the sugar and the milk/egg mixture to the rice. Mix thoroughly and continually for 2 to 3 minutes.
  6. Note: If you are putting raisins in your rice pudding, add them at this time as well - along with the cinnamon.
  7. Take the pot off the stove. Add the butter and the vanilla extract.
  8. Serve warm or cold.
  9. Makes about 8 servings.
